It is a simple and straightforward commitment to the highest quality coffee, prepared excellently and sourced and served as sustainably as possible.

Coffee is a culinary art. It is essential to start with truly great raw ingredients: our world-class green coffee beans. Only the most conscientious farmers are willing to put the amount of work and attention required to produce the finest quality green coffee for Barefoot. These farmers are craftspeople committed to producing exceptional tasting coffees. We pay far more for their coffee because it tastes better and is better for the entire planet. You get what you pay for.
What good is finding the best coffee beans from great farmers if they do not earn enough money to pay their skilled workers and to reinvest in improvements to their farm to make next years crop even better? And if they earn a decent living but are polluting the environment, destroying natural habitat and poisoning their people then what kind of farm is that? What is required is a beautiful balance of economic fairness, environmental stewardship and social justice that we call Sustainability. Sustainability is simply the best balanced way to ensure that the entire coffee life line can sustain and grow and prosper without negative effects. If we want great coffee from great farmers next year and the year after that then a sustainable model of fair prices which allow fair wages, organic and natural growing methods and strong relationships are essential. We are always striving to get the best possible quality green coffee beans with the best flavor.
We then take this amazing coffee and work our hardest to extract out as many of the more than 800 different flavor compounds as we can through the roasting process. Our job as an artisan coffee roaster is not to impart some signature or special flavor to the coffee. Our job is simply to coax out the full complexity of flavor that is already present in the green coffee just waiting to emerge and dazzle your taste buds. We roast each coffee to its individual peak flavor. We practice the time consuming art of post roast blending to get the most complex flavors and truest nuances. This means that even for a complex blend of six beans we roast each bean separately to ensure maximum flavor. At Barefoot we roast coffee in small batch roasters in order to focus our attention on every pound of coffee. We seek perfection of flavor in every small, micro-controlled batch. We are not artists. We are craftspeople. Craftsmanship takes a high degree of skill and passion combined with science and precision. Our roasters are akin to Chefs in their understanding of the chemical, pyrolitical and flavor dynamics that occur during the roasting process and how each of the myriad factors affects the taste in the final preparation. The roasting profile and bean selection are all varied depending on the final preparation process. Espresso preparation benefits from different beans and roast profiles than filter drip coffee.
Once these magical beans are roasted to their individual peak flavor, professional Baristas apply their high level of craftsmanship and skill to coax even more flavor. Highly trained Baristas are like the experienced line cooks who make even the most complicated drink nearly perfect 100�s of times a day in varying conditions. It takes dedication, extensive and continued training, a passion for great coffee and a desire to be the best. The Barista can often times have the most impact on the final taste of the coffee drink. They are the final hand that crafts the drink and can take a perfectly grown and processed Guatemalan Peaberry coffee that was roasted to perfection and make it taste so bad it hurts. But a professional Barista is like a magician; taking the same perfect coffee and preparing it with skill, passion and attention to detail and serving you an amazing single origin espresso macchiato that literally has you licking the cup clean with delight.
